A grilled chicken is a good source of protein, carbohydrate, vitamins and minerals. It is also healthier than fried chicken because grilling uses less oil than deep-frying, meaning fewer calories and fat in the final product.

Grilled Chicken Breast is the perfect meal! This easy, healthy recipe produces tender and plump marinated chicken breasts that are grilled to golden perfection cooked with all assorted vegetables in olive oil and peri peri sauce.

Preparing the Marinade: First we need to prepare the chicken marinade. Take a chicken breast piece and wash it properly. Dry out the additional water on the chicken piece with the help of a tissue paper. In a separate bowl take one tablespoon ginger garlic paste. To it add thyme, rosemary, oregano and chilli flakes. Add pinch of salt to it. Mix it properly and add the chicken breast to it. Mix it properly and put aside in the deep freezer for 30 mins.

Boiling the vegetables: Take a separate bowl. To it add cauliflower, broccoli, mushroom and carrots. Add some salt and boil it. Once boiled drain out the water and add ice cubes to it. Put the bowl inside the deep freezer. This will help preserve the crunchiness of the vegetables.

Now the Grilling part: Now take the grilling pan and add some olive oil to it. Once hot put the marinated chicken to it. It should be cooked in medium flame. Grilling chicken breasts over a medium high heat helps to seal the juices in, keeping your chicken breasts nice and moist. The higher heat gives a nice sear adding the char from the barbecue that we all love so much! Once it's grilled take it out and in the same pan add some more olive oil if needed. To it add some thyme and rosemary. Add the boiled vegetables To it. Toss it. Add 2 teaspoons of peri peri sauce. You can add one teaspoon of sweet chilli sauce if you like a sweet flavor. Toss it again and add grilled chicken to it. Cook in low flame for another 5 minutes. Add salt as per taste.

The dish is ready.

The entire cooking process will not take more than 40 minutes including marination.
